I know some people might find chopping therapeutic after a long day of work but not me. I looked for a quick alternative and found this Parmesan-Crusted Tilapia from Rachel Ray.
before going in the oven
You can get the recipe here...you basically just mix paprika, parsley and parmesan cheese together and put a little olive oil on the fish and coat with the cheese mixture. I did not have grated parmesan, only shredded and I used less cheese than the recipe called for and it still turned out great.
I roasted some asparagus and tomatoes with EVOO (that's for Rachel Ray) and a little salt and pepper and put it in the oven at the same time as the fish...which worked out perfectly!
FYI...foil is my best friend for a quick and easy cleanup!
